Sazerac

New Orleans official cocktail. Originally Cognac, switched to Rye after phylloxera.

Ingredients

• 2 oz Rye Whiskey
• 0.25 oz Simple Syrup
• 4 dashes Peychaud's Bitters
• Absinthe (Rinse)

Instructions

1. Rinse glass with absinthe.
2. Stir rye, sugar, bitters with ice.
3. Strain into rinsed glass.
4. Express lemon peel.
